Caribbean Beach Resort Under Construction with Food Trucks

The Caribbean Beach Resort is under construction and has been taken over by food trucks.  This is the breakfast and lunch food truck available to the south of the pool.  This truck features breakfast sandwiches, pastries, and coffee in the morning.  Lunch is gyros, cheese steaks, and more child appropriate fare like chicken nuggets and hot dogs.

The Bar menu has frozen specialty drinks, like a Grand Margarita ($12.50) made with Jose Cuervo Gold Tequila, Grand Marnier, lime juice, and sweet and sour mix or the Strawberry Margarita ($12.25) made with Herradura Reposado Tequila and lime juice blended with strawberry purée.  The Pina CoLAVA ($10.75) was entirely too sweet, but very tropical and featured Bacardi Raspberry Rum blended with Pina Colada Mix and raspberry purée swirled in.

There’s also a slew of specialty drinks that come in a specialty glass.  These include the Purple Martin ($14.75) with passion fruit liqueur, mango rum, Curacao, and pomegranate light lemonade.  Enjoy old favorites like the Big Island Iced tea ($11.50), similar to the Long Island Iced tea and a Captain’s Mai Tai like a Mai Tai made with Captain Morgan’s Spiced Rum ($10.50).  Finally, the Banana Cabana ($10.50) was mango and coconut rum with creme de banana liqueur, orange and pineapple juice, and a floater of grenadine.

There was also draft beer, including an IPA that was absolutely outstanding, but the name escapes me.  The bar had a some nice features, namely being directly in front of a gorgeous beach filled with plenty of seating.


During breakfast and dinner, there is a food truck and Kiosks by the main entrance to the giant tent. The kiosks are off to the right, the truck where you pick up your food is to the left, and the buffet is inside the tent.  You can pack a breakfast to go box for $14.99 which is a pretty good deal!

There also island markets set up in hotel rooms in several “islands” around the resort.
